What to do about Chicken
I think I’ve taken the wrong approach to my apron mission.

The grass is always greener…
When I’m working, I think, studying isn’t that bad – you set your own schedule, you can wear whatever you want, it’s your only responsibility. But now that I’m studying again… oh lordy, I would do anything to be working instead. Alas, it’s almost over. I made Andrew promise that we will not move anywhere that requires taking another bar exam, and Andrew made me promise that I won’t do anymore cooking until after this bar exam. Apparently, I’m a bit of a slob.
This salad is inspired by the all vegetable restaurant Le Verdure in Eataly. We were skeptical about trying the place (we had our hopes set on the pasta restaurant but were not willing to do the 1 ½ hour wait) but were pleasantly surprised. We had their incredibly tasty pepper salad and lentil soup

Confession + Turkey Chili
I have a confession to make… I’m starting to like wedding planning. Three of my best friends and I spent the whole weekend eating, wedding dress shopping, and talking wedding things, and I had the best time. I never thought I would like this whole wedding business (admittedly I looked down on it as being over the top and narcissistic), but this weekend officially made me a convert. Celebrating with your friends, trying on and looking at beautiful things, and eating delicious foods – how can you go wrong?
By Sunday night, I was exhausted and in major need of comfort food. This Turkey Chili managed to satisfy my craving without making me feel like I overate.

Mexican Salad
Mmmm, mm. This is one of my favorites.
When it comes to cooking, I think you’re either a recipe apron or a impromptu apron.
When I’m cooking, I always need a recipe. I generally follow them to the letter. Andrew, on the other hand, has this ability to look at what’s in the kitchen and throw everything together to make a meal. He doesn’t even remember what’s in it once he’s finished. That’s where this meal was born, and I followed Andrew around the kitchen so I could put to paper his creative musings.

Prosciutto and Mozzarella Flatbread
Two weeks ago, I started my job as an official Suit. I’m admittedly happy to be working- to have structure and a routine to my days. Now that I have it in writing, you can remind me later when I’m pulling my hair out from stress. But it’s tempting to let my apron-learning exercises fall by the wayside. By the time I get home, I gravitate quickly to the couch and barely have the energy to check my e-mail, let alone cook.
Unfortunately for my lazy (sane?) side, the whole point of this blog o’ mine is learning to be an Apron despite being tired from life as a Suit.
This last weekend I made this prosciutto and mozzarella flatbread that’s actually easy, healthy, and quick enough to incorporate into my weekday dinners.
