Breakfast Burritos
My Fourth of July Weekend was filled with studying, studying, a wedding, not feeling so good the morning after the wedding, and more studying. Jealous?
Other than the beautiful wedding, my highlights of the weekend centered around eating, especially these breakfast burritos (great hangover cure). It’s not the healthiest of breakfasts, but given that my idea of healthy when I eat out for breakfast is forgoing the French toast in lieu of getting the traditional eggs/toast/sausage/hash browns, it’s really not that bad.

Serving Size: 2 burritos
[I try to avoid Starbucks as much as possible by making my own coffee, but this morning was an exception]
Ingredients:
- 4 eggs
- Mexican Cheese
- Frozen french fries
- Frozen turkey sausage links
- Flour tortillas
- Butter
- Milk
Tools:
- Oven pan
- Medium sized skillet
- Spatula
- Micriowave/Oven/Stove
Step 1: I preheated the oven to 425 degrees.
Step 2: I laid out a handful of french fries (leftover from California Burritos) on an oven pan covered with tin foil.
Step 3: After I stuck the french fries in, I scrambled 4 eggs, put a little butter in a medium sized pan, and poured the eggs in.
Step 4: I like to add a little milk to the eggs to make them fluffier.
Step 5: Using the spatula, I scrambled the eggs, moving them around as they cooked (a little stuck to the bottom of the pan – I blame the pan).
Step 6: While the eggs finished cooking, I microwaved 4 turkey sausages and sliced them in half.
Step 7: I portioned the eggs out onto each tortilla, added a handful of french fries, two sausages, sprinkled some mexican cheese, and rolled them up.
Paired with a big glass of OJ, I felt so much better after eating these burritos. They’re also really filling so I didn’t even need lunch (but definitely a big dinner of BBQ!).
